The extra virgin olive oil Baró de Maials, like early harvest oils, is distinguished by its green colour, fuller body, and slightly bitter flavour, like all oils described as “fruity” because they come from greener fruit.

The oil’s colour progressively turns yellowish, due to the waning of the effect produced by the chlorophyll, but its characteristic flavour remains intact.
